Indulge in irresistible carrot pancakes, a delicious and nutritious way to start your day. With the softness of Harina Noroeste® and the sweet touch of shredded carrot, these pancakes are fluffy and full of flavor.
- 2 cups of Harina Noroeste® flour
- 1 tsp. of baking powder
- 2 egg yolks
- 2 egg whites
- 1½ pcs. grated carrot
- Cinnamon to taste
- 15 ml. of vanilla extract
- 2 tbsp. of brown sugar
- 3 tbsp. of melted butter
- 1 cup of milk
- Candied Walnuts
- Maple syrup
- In a large bowl, we combine the Noroeste® flour, baking powder, cinnamon, milk, egg yolks, vanilla extract, and melted butter. In another bowl, we beat the egg whites with the brown sugar until stiff peaks form, then gently fold them into the previous mixture until a homogeneous batter is obtained.
- We heat a pan over medium heat and add a little butter. We pour some batter into the hot pan, sprinkle grated carrot over each pancake, and cook until bubbles appear on the surface. Then, we flip the pancakes and cook on the other side until golden brown.
- We serve the hot pancakes with Greek yogurt, candied nuts, maple syrup, and more grated carrot for an extra touch of flavor. Ready to enjoy!
